The short answer

Evening cravings are not evidence of weak willpower or a sugar addiction. Layered on top, an underfed day, particularly one light on protein, leaves a genuine deficit that surfaces late. Short sleep pushes the hunger hormones in the same direction. And repetition turns the whole thing into a cue: same chair, same hour, same craving.

Your body clock raises evening appetite

The cleanest evidence here comes from a forced-desynchrony study, a design that separates the internal body clock from the ordinary daily schedule. Participants lived on a recurring 28-hour day, so their meals and sleep drifted around the clock while their internal rhythm kept its own time. Scheer and colleagues, publishing in Obesity in 2013, found hunger and appetite ratings were lowest around the internal biological morning and peaked in the internal biological evening, roughly 8am and 8pm in normal terms. Appetite for sweet, salty and starchy food specifically followed the same curve.

That result matters because food and activity were held constant by design. The evening peak was not caused by what participants ate or did that day. It was the clock itself.

The protein debt from earlier in the day

The circadian peak sets the baseline. What decides whether it is a passing thought or a raid on the kitchen is usually the rest of the day. Protein is the most satiating of the macronutrients and the one most easily squeezed out of a busy or low-appetite day, because it generally requires actual cooking. Coffee, a pastry, a light lunch, and by evening the peak is landing on top of a real shortfall.

This is the single most common pattern behind a difficult evening, and the one most within reach. A day that hits your protein floor by mid-afternoon changes the evening noticeably, not because the circadian peak goes away, but because it stops arriving on top of a deficit. How much of it is habit

A large share, and this is the encouraging part. Craving at a consistent time, in a consistent place, after a consistent trigger, is a learned loop rather than a purely biological one. The sofa at 9pm, the end of a work session, the moment the house goes quiet: these become cues that fire the craving on schedule, and the schedule is why it feels so reliable and so involuntary.

Learned loops respond to changing the cue more readily than to resisting the craving. Eating dinner at the table instead of the sofa, brushing your teeth earlier, keeping the specific food out of the house rather than in it, moving the evening routine to a different room: these all sound trivially small, and they work better than willpower does because they interrupt the trigger rather than fighting the response. What this is not, in most cases, is binge eating, which is a distinct clinical pattern.

What actually turns it down

Three things, in order of how much they tend to help. Getting the day's protein in before evening, which addresses the deficit rather than the peak. Protecting sleep, which lowers the hormonal contribution. Changing the evening cue, which breaks the learned part. Nothing on that list removes the circadian peak, because nothing can, and expecting to feel no evening appetite at all is the wrong target.

The fourth option is to eat something, deliberately. A protein-forward snack tends to end the episode; a sweet one tends to extend it, since it satisfies the craving in the moment while doing little for actual fullness.
