The pattern was consistent: pleasantness ratings for the eaten food dropped, while ratings for untried foods barely moved.
That decline is specific to the food itself, its flavour, texture, and appearance, not to your stomach's overall capacity. Introduce a new flavour, especially something sweet after something savoury, and the appeal resets, because it is a different food.
Why it is not a second stomach
Your stomach does not grow a separate compartment for cake. What changes is entirely in how your brain rates the food in front of you, not how much physical space is left. The original studies measured this with pleasantness ratings on a scale, taken before and after eating, and the ratings track the specific food eaten far more closely than they track how full someone reports feeling.
That distinction matters because it reframes what is happening at the end of a big dinner. You are not tricking your body into eating past capacity. You are experiencing an accurate signal about a different food, layered on top of an accurate signal about the food you just finished.

It is that a buffet offers more distinct foods in front of you at once, each one still carrying its full, unspent appeal because you have not eaten any of it yet.
